When we were children, our parents drummed into us us that "breakfast is the most important meal of the day" and I do not not disagree! And who says you can't have a healthy diabetic-friendly breakfast for even the most sweet, savory, and seemingly unhealthy morning meal? For many people, breakfast is the most neglected meal of the day. But if you have type 2 Diabetes, breakfast is a must, and it can have real benefits. Researchers found that eating breakfast with a low glycemic value(Patrick Holford's books are very helpful in finding out glycemic indexes) may help prevent a spike in blood sugar all morning long — and even after lunch. In the study, people with diabetes who ate almonds as part of a balanced breakfast felt more full and had lower blood glucose levels after both breakfast and lunch. What You'll Need:
- 1 tablespoon butter
- 1 cup finely chopped onion
- 1 clove garlic, minced
- 3 roma or pear tomatoes, seeded, diced
- 1 1/2 cup liquid egg substitute/or 3 eggs
What To Do:
- In a medium nonstick skillet over medium heat, melt butter. Add onion and garlic, cooking until onion is tender, stirring occasionally. Add tomatoes.
- Cover and simmer about 10 minutes. Add eggs to skillet and cook until eggs are set but not overdone.

At this point I much rather confess that I am not much of a chef at all. My approach is eating the healthiest foods for us diabetics like avocados, oats, low-fat milk, greek joghurt, almonds, mixed seeds, apples, small amount of bananas, cous-cous, brown rice, polenta, wholewheat bread, few potatoes and vegetables in all kinds of mixes and combinations. As you can guess from this list, I'm vegetarian, no meat, no eggs.
However I eat cheese, lots (more than is advisable anyway)!
Because of being "on pension" I have a lot of time and love to do research. That is how I think I can assist and support other diabetics. I am also writing a book on immigrating from a first world country into the third world, which has it's very special highlights.... Millions of misunderstandings as well.

For today I hope you are inspired to EAT BREAKFAST every day of your diabetic life. A hefty, healthy breakfast is also said to resolve the problem of obesity. Not eating in the morning causes blood sugar spikes, which may lead to sugar cravings and binge eating. I am very lucky, that I don't have that gene and/or my appetite is naturally low.
